Sweet and Sour Pork

 Source: https://www.recipetineats.com/sweet-and-sour-pork/

Ingredients:

TENDERISED MARINATED PORK:

  • 400g/14oz pork scotch roast (aka pork neck, collar butt) or shoulder / butt, cut into 2cm / 4/5" cubes (Note 1)
  • 1/2 onion , finely grated (Note 2a)
  • 1 tsp garlic , finely grated (Note 2a)
  • 1 tsp ginger , finely grated (Note 2a)
  • 3/8 tsp baking soda (bi-carb) (Note 2b)
  • 2 tsp cornflour/cornstarch
  • 2 tbsp light soy sauce , or all purpose (Note 3)

FOR FRYING:

  • 5 tbsp cornflour/cornstarch - for mixing in
  • 1/2 cup cornflour/cornstarch - for Coating
  • 2 - 3 cups vegetable or canola oil

SWEET & SOUR SAUCE:

  • 1/3 cup white sugar
  • 1/3 cup apple cider vinegar (or 1/4 cup normal white vinegar)
  • 3 tbsp pineapple juice (from a 227g/8oz can pineapple pieces in juice, preferably no added sugar, Note 4)
  • 3 tbsp ketchup (or Aussie tomato sauce)
  • 1/2 tsp Worcestershire sauce
  • 1 tbsp soy sauce , light
  • 1 tsp Oyster Sauce (Note 5)
  • 4 tsp cornflour/corn starch
  • 1/2 cup water

STIR FRYING:

  • 1 tbsp oil
  • 1 garlic clove , finely chopped
  • 2 tsp ginger , finely chopped
  • 1 onion (medium), cut into 2.5cm/ 1" cubes (brown, white, yellow)
  • 1/2 red capsicum/bell pepper (large), cut into 2.5cm / 1" cubes
  • 1/2 green capsicum/bell pepper (large), cut into 2.5cm / 1" cubes
  • 1 cup pineapple pieces (from the can of pineapple under Sauce)

Instructions:

MARINADE PORK:

  • Mix Pork with Marinade. Marinade 18 to 24 hours. (See Note 1 for marinating time for other cuts)

PREPARATION:

  • Rack & warm oven: Preheat oven to 80°C/175°F and place rack on tray - to keep pork warm.
  • Sauce: Place all Sauce ingredients EXCEPT water in a large jug or small bowl. Mix until combined, then mix in water.
  • Be Stir Fry Ready: Have all ingredients lined up, ready to toss in. After Fry #2, things move quickly.

DOUBLE DREDGE:

  • Coating #1: Mix 5 tablespoons cornflour into the pork and leave for 5 minutes. At first, it will be white from the cornflour, but after a while it will sweat and make the cornflour (mostly / partially) wet, and will be sticky (this is key for coating to stick).
  • Coating #2: Spread 1/2 cup cornflour in a shallow bowl. Coat pork, shaking off excess, and pile onto a plate.
  • Reserve cornflour in case you need to dust again just prior to frying. Pork should be at least half white when you put it into the oil (if not, just sprinkle with reserved cornflour).

FRIED CRISPY PORK (NOTE 6 FOR OVEN):

  • Heat oil: Pour enough oil into a large saucepan or small pot so it's 2.5cm / 1" deep. Heat to 180°C/350°F (or until pork immediately starts sizzling when you dip it in).
  • Fry #1: Cook pork in batches, being sure not to crowd the pot, for 3 minutes until golden. Drain on rack. This step is just to cook the pork. It takes me 4 batches.
  • Fry #2: Turn the stove up slightly and heat oil to 200°C/390°F. Starting with the coolest pork, add half the pork (you can crowd the pot) and cook for 1 1/2 minutes, or until pork is deep golden brown and crispy. Transfer to rack, repeat with remaining pork - I do 2 batches.
  • Keep warm in oven.

SAUCE & STIR FRY:

  • Heat oil in a very large skillet over high heat.
  • Add garlic, ginger and onion, stir for 1 1/2 minutes. Add capsicum and stir for 2 minutes.
  • Add Sauce & pinapple, then let it come to a rapid simmer. Simmer for 2 minutes until it thickens - when you drag the spoon across the base, a path should briefly appear (see video at 1 min 53 s).
  • 10 second toss: Add pork, then QUICKLY toss to coat - aim for 10 seconds!
  • Serve asap! Pour onto serving plate, serve immediately! Will stay crispy for around 5 minutes then starts softening but still has a solid coating. This is just the reality of Sweet and Sour Pork, even at restaurants!

Steam egg with minced pork

 Source: https://cookinginchinglish.com/steamed-egg-with-minced-pork/

Ingredients:

½ lb 20% fat ground pork, about 225g

▢2 tbsp soy sauce

▢1 tbsp Shaoxing wine, or rice cooking wine

▢½ tsp minced garlic, about a clove

▢½ tsp freshly grated ginger

▢⅛ tsp white pepper powder

▢1 pinch Chinese five spice powder, optional

▢1 pinch salt

▢½ tsp sugar

▢½ tsp corn starch

▢1 scallion , chopped

▢4 eggs

▢½ cup warm water

Instructions:

Preparing

In a shallow bowl, mix ground pork with soy sauce, Shaoxing wine, garlic, ginger, white pepper powder, Chinese five spice, salt, sugar, and corn starch. Finally stir in chopped scallion and set it aside.

Whisk eggs with warm water until smooth. Try not to incorporate too much air in it.

Pour the egg mixture into the shallow bowl through a sift and then gently loosen and evenly distribute the pork a bit. (See the picture in the post as a reference.)

Cooking

In a pot with a lid, bring 3 cups of water to a boil over medium heat. Insert a steamer basket/rack into the pot and place the bowl on top.

Reduce the heat to medium low and cover pot with lid, but leave a little opening and steam for 20-25 minutes or until the egg custard is set. To check whether it's cooked through, poke a hole with a chopstick and see if there's any liquid coming out, if not, then the dish is ready.

Keto Waffles Recipe

 Source: https://healthyrecipesblogs.com/gluten-free-waffles/

Ingredients

3 large eggs

1 tablespoon vanilla extract (yes, a full tablespoon, not a typo!)

½ teaspoon stevia glycerite (equals 2 tablespoons sugar)*

½ cup whole milk

2 cups blanched finely ground almond flour (8 oz)**

¼ teaspoon Diamond Crystal kosher salt

1 teaspoon baking soda

2 tablespoons melted unsalted butter for the waffle maker

Instructions:

  • Plug your waffle maker in. Set your oven to warm (150°F) and fit a baking sheet with a wire rack. Place the baking sheet in the oven.
  • In a medium bowl, whisk together the eggs, vanilla, stevia, and milk.
  • Gradually add the almond flour, whisking it in until the mixture is smooth.
  • If the batter seems very thick, add a little water. I often add 2 tablespoons.
  • Mix in the kosher salt and the baking soda.
  • Brush the waffle maker with melted butter. Pour the batter into the waffle maker, using a scant ½ measuring cup per waffle and spreading the batter to the corners before closing the lid.
  • Cook until puffy and set, about 5 minutes. When the first batch of waffles is ready, place the cooked waffles on the wire rack in the warm oven to keep them warm.
  • Brush the waffle maker with more melted butter and repeat steps 5 and 6 until all the batter is gone. Serve the waffles immediately.

Fesenjoon

Source: http://mypersiankitchen.com/khoresht-fesenjan-persian-pomegranate-and-walnut-stew/

khoresht-fesenjan1-small

Ingredients:
8 chicken thigh pieces
1 onion
2 bay leaves
4 cups walnuts, grinded
1 tbsp flour*
1 cup pomegranate paste**
Method:
  1. Sauté onion until translucent.
  2. Season chicken with salt and pepper. Add to onion and cook for a few minutes.
  3. Turn chicken pieces after a few minutes.  Add bay leaves and 1/2 cup of water.  Cover and cook for 30 minutes.
  4. Warm up another pot and place 1 tbsp of flour. Toast the flour slightly.
  5. Add 2 cups of water and mix well until all lumps are gone.
  6. Add ground walnuts.
  7. Stir until water and walnuts are thoroughly mixed. Cook on low.
  8. Make sure you stay on top of it during this process.  As the mixture thickens, it can easily burn.  This process might take a little while. Once you see a layer of oil forming on top of the walnuts the hard work is pretty much done. You can actually see the oil rise through the bubbles.
  9. Add pomegranate paste and mix well.  Season with salt.
  10. Please add chicken pieces making sure that each piece is submerged in the stew. Cook for a few minutes longer so that the flavors incorporate and chicken warms through.
  11. Serve Khoresht Fesenjan over rice. Pomegranate seeds can be added for added flavor and a pretty presentation.   If the stew is too sour, sugar may be added to sweeten it up a bit. Enjoy!

* Gluten-Free folks, please use GF Flour.
** Depending on which brand of Pomegranate Paste you use, the color of the stew may vary from a deep burgundy to brown.  I have noticed that Sadaf’s Pomegranate paste is not dense, but slightly on the liquid side. Add a little more until the color adjusts to a deep burgundy.  If the result is too tart, add more sugar.

P. F. Chang's Mongolian Beef

Source: http://www.food.com/recipe/p-f-changs-mongolian-beef-66121

P. F. Chang's Mongolian Beef. Photo by Caroline Cooks

Total Time: 30 mins
Prep Time: 10 mins
Cook Time: 20 mins

Ingredients:
2 teaspoons vegetable oil
1/2 teaspoon ginger, minced
1 tablespoon garlic, chopped
1/2 cup soy sauce
1/2 cup water
3/4 cup dark brown sugar
vegetable oil, for frying (about 1 cup)
1 lb flank steak
1/4 cup cornstarch
2 large green onions, sliced on the diagonal into one-inch lengths

Method:

1. Make the sauce by heating 2 tsp of vegetable oil in a medium saucepan over med/low heat.
2. Don't get the oil too hot.
3. Add ginger and garlic to the pan and quickly add the soy sauce and water before the garlic scorches.
4. Dissolve the brown sugar in the sauce, then raise the heat to about medium and boil the sauce for 2-3 minutes or until the sauce thickens.
5. Remove it from the heat.
6. Slice the flank steak against the grain into 1/4" thick bite-size slices (Tilt the blade of your knife at about a forty five degree angle to the top of the steak so that you get wider cuts).
7. Dip the steak pieces into the cornstarch to apply a very thin dusting to both sides of each piece of beef.
8. Let the beef sit for about 10 minutes so that the cornstarch sticks.
9. As the beef sits, heat up one cup of oil in a wok (you may also use a skillet for this step as long as the beef will be mostly covered with oil).
10. Heat the oil over medium heat until it's nice and hot, but not smoking.
11. Add the beef to the oil and sauté for just two minutes, or until the beef just begins to darken on the edges.
12. You don't need a thorough cooking here since the beef is going to go back on the heat later.
13. Stir the meat around a little so that it cooks evenly.
14. After a couple minutes, use a large slotted spoon to take the meat out and onto paper towels, then pour the oil out of the wok or skillet.
15. Put the pan back over the heat, dump the meat back into it and simmer for one minute.
16. Add the sauce, cook for one minute while stirring, then add all the green onions.
17. Cook for one more minute, then remove the beef and onions with tongs or a slotted spoon to a serving plate.
18. Leave the excess sauce behind in the pan.
